In the West Godavari district’s Jangareddygudem, a local man has been running a soda business for the past 40 years. The process involves mixing water, salt, and optional flavours in a bottle, which is then placed in a soda-making machine where carbon dioxide is injected. The bottle is shaken several times to ensure even gas distribution. This process causes the internal pressure to seal the bottle’s muzzle, preparing the soda to be sold chilled the next morning.
Mosheb Shahib, reflecting on the changes brought by modern technology, mentioned that machines now simplify soda production and enhance the capacity for distribution. He recalled that when he started, goli soda, including varieties like lemon and coloured sodas, was quite popular due to the proximity of Jangareddygudem to agency areas.
Previously, soda-making involved more labour-intensive steps, including mixing water with lemons, flour, and salt, and then carbonating it before it was cooled overnight. These sodas, especially lemon and coloured varieties, were then sold in the morning and afternoon.
With the advent of new technology, producing soda has become easier. Current methods allow for direct use of mineral water, improving both the cooling process and taste. Today, there are several types of sodas available such as lemon soda, sweet soda, and jeera (cumin) soda. Lemon soda is favoured by those seeking relief from the heat, sweet soda is beneficial for those needing a quick sugar boost, and jeera soda aids digestion.
Mosheb proudly stated that his business has thrived for 40 years, with earnings fluctuating seasonally. Sales peak in the summer due to higher demand, while rainy and winter seasons see a decline. He believes that goli soda if prepared and stored overnight, offers a superior taste compared to instantly made sodas. His son has also joined the business, ensuring the continuity of their traditional craft. Mosheb is optimistic about the future relevance of sodas as people increasingly avoid chemical-laden cold drinks, returning to traditional options like goli soda.
