Mango smoothie bowl by Priya Vijan X Namdhari

Ingredients

• 2 Mangoes, chopped

• 2 Bananas

For the topping:

• Museli

• Chopped almonds

• Chopped berries

• Coconut

Method

Blend all ingredients along with water/plant milk.

Top it up with toppings of your choice.

Mango Salsa recipe by Priya Vijan X Namdhari

Ingredients

3 ripe mangos, diced

1 medium red bell pepper, chopped

½ cup chopped red onion

¼ cup packed fresh cilantro leaves, chopped

1 jalapeño, seeded and minced

1 large lime, juiced

⅛ to ¼ teaspoon salt, to taste

Method

Mix all ingredients and serve immediately.

Mango Barfi

Ingredients

30gm Oats, rolled

30gm Cashews

20gm Coconut Flour

15gm Coconut Sugar/Jaggery

70gm Mango Puree

1/4tsp Cardamom powder

Few Slivered Almonds for garnish

Method

• Dry roast oats for 2-3mins on low heat.

• Add in cashew & coconut flour.

• Dry roast for 1-2mins.

• Add rest of the ingredients and cook till forms a thick mixture.

• Put in a square/rectangular pan, pressing it firm.

• Garnish with almonds.

• Let it cool completely.

Cut into squares and serve.

Mango Rolls with Mango-Cilantro Dipping sauce

Ingredients

2 Rice Paper Rolls

3 Colour Bell Pepper, sliced

Purple Cabbage, sliced

Mango, sliced

Handful Basil Leaves

For dipping sauce

1 Mango

1tsp Lemon Juice

1 Green chilli

Handful coriander

Salt to taste

Method

• For rolls:

Dip the rice paper in water for 5-8secs.

Put it on a flat surface and add the sliced veggies and roll.

Slice and serve.

• For dipping sauce:

Blend all ingredients and its ready!
